Ingredients:
- 1 Tbsp Vegetable Oil
- 1 large yellow onion, diced
- 2 poblano peppers, seeded & diced
- jalapeno pepper, seeded and finely chopped
- 3 garlic cloves, slice
- 2 tsp kosher salt
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 2 c corn, drained and rinsed
- 3 c seafood stock
- 1 c water
- 3 c cilantro (about 3 bunches)
- 1 1/2 lb haddock or flaky white fish cut into 1/2 in cubes
- 1 1/2 lb medium shrimp (41-50) peeled and deveined
- Another 3 c corn
- crumbled cotija cheese
- thinly sliced radishes
- chopped cilantro
- lime wedges
Directions:
- Add oil to the pot
- Set to sear/saute function.
- Heat oil until hot, about 3 minutes
- Add onion, poblanos, jalapeno, and garlic to pot and cook, stirring occasionally until onions begin to soften – about 5 minutes.
- Add salt, cumin, and coriander and cook, stirring frequently, for 2 minutes.
- Add 2 c corn, the fish stock, and water and stir to combine.
- Close led and set to locked position.
- Start pressure cook function. Cook 15 minutes
- Remove lid and add cilantro leaves.
- Using an immersion blender, blend until smooth.
- Start sear/saute function
- Add haddock, shrimp and corn. Stir to combine.
- Close lid and lock and vent.
- Cook until haddock & shrimp are fully cooked, about 8 minutes
- Remove lid, add remaining corn & stir.
- Serve topped with cotija, radish, cilantro & lime wedges.
