Cuban Sandwich

Ingredients

  • 1 lb pork tenderloin
  • 1/4 c olive oil
  • 1/4 c orange juice
  • 2 TBSP lime juice
  • 1 tsp minced garlic
  • 1/2 tsp dried oregano
  • 1/4 tsp ground cumin
  • salt and pepper
  • Cuban bread loaf or baguette
  • sliced swiss cheese
  • sliced smoked ham
  • pickle chips
  • mustard
  • butter

Directions

  1. Whisk olive oil, orange juice, lime juice, garlic, oregano, cumin, salt and pepper in a bowl. Place pork in the bowl and cover in marinade. Cover the bowl and refrigerate 1-6 hours.
  2. Heat grill to med high. Grill the pork for 7-9 minutes per side.
  3. Let pork rest 5 minutes, then thinly slice.
  4. Cut the loaf lengthwise then crosswise.
  5. On the bottom halves place: cheese, ham, pork, then pickles, then more cheese. Spread mustard on tops then place tops.
  6. Use the grill or a skillet to press the sandwiches-about 3-4 minutes per side.
