Ingredients (these are halved from original recipe)
- 1 cup yellow cornmeal
- 1 cup flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 tablespoon salt
- 1 cup whole milk
- 1/4 cup unsalted butter
- 1/4 cup honey
- 2 eggs, lightly beaten
Directions:
- Preheat oven to 375. Spray a 9 x 13 in baking pan with nonstick cooking spray
- In a large bowl, whisk the cornmeal with the flour, sugar, baking powder, and salt until combined.
- In a medium bowl, whisk the milk with the melted butter, honey and eggs until combined. Add the milk mixture to the cornmeal mixture and, using a spatula or wooden spoon, stir until just combined.
- Transfer the batter to the prepared baking pan and bake for 30 minutes or until golden brown. Let the corn bread cool slightly before slicing.
