Baked Eggs in Avocado

(serves 2)

Ingredients

  • 2 eggs
  • 1 avocado
  • salt and pepper
  • bacon, cooked and diced (optional)

Directions

  1. Crack 2 eggs in a bow, not puncturing the yolks
  2. Cut an avocado in half and remove the pit. If the hole is too small for an egg, scoop some out.
  3. Place the avocado halves on a baking sheet and scoop the yolks out of the bowl into each avocado hole. Fill the remainder of the hole with leftover egg whites.
  4. Add pepper and salt on top of each egg
  5. Place in the oven at 425 for 15 minutes.
  6. Remove from oven and add crumbled bacon on top (optional)
