Ingredients
- 2 eggs
- 1 avocado
- salt and pepper
- bacon, cooked and diced (optional)
Directions
- Crack 2 eggs in a bow, not puncturing the yolks
- Cut an avocado in half and remove the pit. If the hole is too small for an egg, scoop some out.
- Place the avocado halves on a baking sheet and scoop the yolks out of the bowl into each avocado hole. Fill the remainder of the hole with leftover egg whites.
- Add pepper and salt on top of each egg
- Place in the oven at 425 for 15 minutes.
- Remove from oven and add crumbled bacon on top (optional)
