Shrimp Tikka Masala

Ingredients:

  • 2 TBSP EVOO
  • 1 large onion, thinly sliced
  • 3 TBSP grated ginger
  • 1 TBSP finely grated garlic
  • 2 tsp tomato paste
  • 2 tsp garam masala
  • 1/2 tsp chili powder
  • 1 c water
  • 20 large shrimp
  • 1/4 c plain yogurt

Directions:

  1. Heat oil in a Dutch oven over medium heat. Cook onion until golden, about 20 minutes.
  2. Add ginger, garlic, tomato paste, garam masala, and chili powder. Cook until fragrant, about 3 minutes.
  3. Add water and shrimp. Cook until shrimp are opaque and cooked through, about 4 minutes. Remove from heat.
  4. Stir in yogurt. Season with salt and pepper.
