Ingredients:
- 3/4 c walnuts
- 1/3 c EVOO
- 6 oz spinach
- 2 TBSP white wine vinegar
- salt and pepper
Directions:
- Combine walnuts and oil in a small saucepan over med-low heat. Stir occasionally until walnuts are toasted, about 15 min.
- Toss spinach with vinegar and season with salt and pepper. Top with walnuts, and drizzle with warm olive oil
