Warm Spinach Salad

Ingredients:

  • 3/4 c walnuts
  • 1/3 c EVOO
  • 6 oz spinach
  • 2 TBSP white wine vinegar
  • salt and pepper

Directions:

  1. Combine walnuts and oil in a small saucepan over med-low heat. Stir occasionally until walnuts are toasted, about 15 min.
  2. Toss spinach with vinegar and season with salt and pepper. Top with walnuts, and drizzle with warm olive oil
