PASTRY

Ingredients:

  • 2 c milk, scalded
  • 1 c shortening
  • 1/2 c sugar + 1 tsp sugar
  • 3 tsp salt
  • 4 c all-purpose flour + 4 1/2-5 c flour
  • 2 large eggs, room temperature
  • 2 pkgs active dry yeast (1/4 oz each) dissolved in 1 c warm water

Directions:

  1. In a large bowl, pour milk over shortening to melt. Add 1/2 c sugar, salt, and 4 c flour.
  2. Beat until well blended.
  3. Add 2 eggs, dissolved yeast/water and 1 tsp sugar
  4. Gradually add flour. Mix until too stiff to turn.
  5. Continue kneading the dough until all flour is used.
  6. Grease bowl and turn dough.
  7. Cover and let rise until it doubles in bulk.
  8. Punch down, let rise – do this twice.
  9. Let rise a third time, then divide dough in half and roll each on a large floured board.
  10. Cut into squares.
  11. Fill centers with 1/2 c filling then pinch closed tightly.
  12. Place on a well-greased pan.
  13. Let rise, bake 30 min in 375 F oven.

FILLING

  • 2 medium heads of cabbage, chopped
  • 2 large onions, browned lightly, seasoned with salt and pepper
  • 2 lbs ground beef
  • 2 tsp salt
  • 1/2 tsp pepper
  • Options: cheese, mushrooms, shredded chicken, peppers
