PASTRY
Ingredients:
- 2 c milk, scalded
- 1 c shortening
- 1/2 c sugar + 1 tsp sugar
- 3 tsp salt
- 4 c all-purpose flour + 4 1/2-5 c flour
- 2 large eggs, room temperature
- 2 pkgs active dry yeast (1/4 oz each) dissolved in 1 c warm water
Directions:
- In a large bowl, pour milk over shortening to melt. Add 1/2 c sugar, salt, and 4 c flour.
- Beat until well blended.
- Add 2 eggs, dissolved yeast/water and 1 tsp sugar
- Gradually add flour. Mix until too stiff to turn.
- Continue kneading the dough until all flour is used.
- Grease bowl and turn dough.
- Cover and let rise until it doubles in bulk.
- Punch down, let rise – do this twice.
- Let rise a third time, then divide dough in half and roll each on a large floured board.
- Cut into squares.
- Fill centers with 1/2 c filling then pinch closed tightly.
- Place on a well-greased pan.
- Let rise, bake 30 min in 375 F oven.
FILLING
- 2 medium heads of cabbage, chopped
- 2 large onions, browned lightly, seasoned with salt and pepper
- 2 lbs ground beef
- 2 tsp salt
- 1/2 tsp pepper
- Options: cheese, mushrooms, shredded chicken, peppers
