Apple and Bacon Breakfast Sandwiches

Ingredients:

  • 8 slices double-smoked bacon
  • 1 medium apple
  • 12 oz Brie cheese
  • 1 tsp chopped fresh thyme
  • 4 TBSP butter, softened
  • 8 (1/2 in thick) slices bread

Directions:

  1. Cook bacon until crisp.
  2. Core and thinly slice apple, leaving the peel on.
  3. Top each of 4 bread slices with 1 1/2 oz Brie, 2 slices bacon, 4 apple slices, 1/3 tsp thyme and another 1 1/2 oz Brie. Top with remaining bread.
  4. Spread 1/2 TBSP butter on the outside of each piece of bread.
  5. Heat a large skillet or griddle over medium heat. Add sandwiches, cook 2 minutes or until bottoms are golden. Work in batches as necessary.
  6. Turn sandwiches over and cook another 2 to 3 minutes or until bottoms are golden and cheese is melted.
