Ingredients
- 1 lb pork tenderloin
- 1/4 c olive oil
- 1/4 c orange juice
- 2 TBSP lime juice
- 1 tsp minced garlic
- 1/2 tsp dried oregano
- 1/4 tsp ground cumin
- salt and pepper
- Cuban bread loaf or baguette
- sliced swiss cheese
- sliced smoked ham
- pickle chips
- mustard
- butter
Directions
- Whisk olive oil, orange juice, lime juice, garlic, oregano, cumin, salt and pepper in a bowl. Place pork in the bowl and cover in marinade. Cover the bowl and refrigerate 1-6 hours.
- Heat grill to med high. Grill the pork for 7-9 minutes per side.
- Let pork rest 5 minutes, then thinly slice.
- Cut the loaf lengthwise then crosswise.
- On the bottom halves place: cheese, ham, pork, then pickles, then more cheese. Spread mustard on tops then place tops.
- Use the grill or a skillet to press the sandwiches-about 3-4 minutes per side.
