Ingredients (makes 4):
- 400g cubed chicken
- Tbsp garam masala
- 50g tikka paste
- 40g fat free natural yoghurt
- Tbsp lemon juice
- 2 tsp chopped garlic
- Tsp ginger puree
- Diced red onion *can add diced red pepper here too
- 4 brioche buns
- 4 mozzarella slices
- A few sprigs of coriander chopped
- 10g light butter
Garlic mayo:
- 50g lighter mayo
- Tsp garlic granules
- Tsp lemon juice
- Pinch of salt
Directions:
- In a bowl, add the chicken, seasoning with the garam masala and adding the tikka paste, yoghurt and lemon juice. Stir well and leave to marinate as long as possible.
- In a large frying pan, add tsp chopped garlic and ginger followed by the chicken. Fry for 10 minutes or so until cooked through. Then add the onion for a further minute.
- Whilst the chicken cooks, make the garlic mayo and set to one side.
- Preheat the oven to 180 degrees celsius. Whilst it heats, lightly toast the bottoms of the brioche buns.
- Place on a baking tray and top with the mozzarella slices, followed by the chicken, garlic mayo and coriander. Bake for 5-10 minutes until the cheese has melted.
- Blast the butter and tsp garlic in the microwave stirring to combine. Once the sliders are cooked, brush over the garlic butter and scatter over the remaining coriander.
