Ingredients
- 1 1/2 pounds new potatoes {I used red and Yukon}
- 3 green onions, chopped
- 2 tablespoons olive oil
- 1 tablespoon white wine vinegar
- 1 tablespoon Dijon mustard
- salt and pepper to taste
Directions
Boil potatoes in water until cooked, but slightly firm. Let potatoes cool down a bit and then slice the larger ones in half.
In a large bowl, combine the olive oil, vinegar, Dijon, salt and pepper and whisk together. Add green onions, potatoes and toss. Serve as a potato salad in the summer time or with a nice, fat juicy sandwich in the winter.
