No Bake Chocolate Eclair Cake

Ingredients

  • 2 packets vanilla instant pudding
  • 5 c milk, plus 1/2 c milk for chocolate
  • Jumbo container of cool whip
  • 1 c sugar
  • 2/3 c cocoa powder
  • 1/3 to 1/2 c chocolate chips
  • 10 TBSP butter
  • splash vanilla
  • graham crackers

 

Directions

  1. Vigorously whisk vanilla pudding with milk.
  2. Let set.
  3. Mix in cool whip. Let it sit.
  4. Combine sugar, 1/2 c. milk and cocoa powder. Bring it to a bubble and bubble for 2 minutes and make sure the sugar all dissolves
  5. Turn down chocolate to low heat and add in chocolate chips, then add butter. Mix.
  6. Take off the heat and add a splash of vanilla.
  7. Layer the bottom of a pan with graham cracker. Pour pudding mixture on top and spread. Add a second layer of graham crackers.
  8. Once chocolate is slightly cooled, pour it on the top and spread.
  9. Put in fridge overnight.
