Ingredients (serves 2):

  • 200g chicken breast
  • Peri seasoning
  • Bbq seasoning
  • Lemon juice
  • Salt
  • Tsp garlic puree
  • Red pepper diced
  • Red onion diced
  • 25g bbq sauce
  • Tbsp peri sauce\
  • 50ml water
  • 4 mini wraps
  • 60g grated mozzarella
  • Parsley to garnish

Yoghurt sauce:

  • 50g fat free greek yoghurt
  • 1/2 tbsp peri sauce
  • Tsp lemon juice
  • Pinch of salt
  • Tsp garlic granules
  1. Season the chicken in a tsp of peri seasoning, a tsp of bbq seasoning and a tbsp lemon juice. Leave to marinate.
  2. In a frying pan, add garlic puree, diced red pepper and diced red onion. Cook for a few minutes until slightly softened.
  3. Add the chicken into the pan. Leave until it is cooked through.
  4. Make up the yoghurt sauce and set to one side.
  5. Once cooked, remove the chicken from the pan, shred with two forks. Return back to the pan and add the bbq sauce, peri sauce and water.
  6. Add the cheese equally between the mini wraps, top with the chicken mixture and some of the peri yoghurt sauce, reserving some for garnish.
  7. Fold and pan fry over medium heat until golden each side and the cheese has melted.
  8. Finish with the remaining peri yoghurt and fresh parsley.
